Tasting Notes:
Every time you try this you’ll notice something new, depending on when or how you visit a pour, it can differ in how it presents itself. When picked apart, you can detect characteristics of the rye and bourbon components. You may also pick up on a slight grape or berry-like fruitiness lingering in the background, which is coming from the month and a half that 13% of this blend spent in a reused François Frères pinot cask (reused after Quixotic). The whiskey still has great weight and intensity of flavors even though it was cut down to 99 proof. There is a nice balance between the mature, aged, savory, and slightly dusty flavors and a youthful, fruity, bright sweetness. The finish is long, oily, and viscous and has a nice spice component that I find appealing.
